Is Excess Keeping You from Achieving Your Goals?

I love Mondays. I’ll admit I haven’t always liked them but the past couple years have taught me to see Mondays as the springboard for each new week. Mondays are a new beginning, a fresh start and, to me, they hold the most potential of any day in the week. So, I love Mondays.

On this momentous day, I wanted to share a thought with you that may sound a little funny but stick with me and it will make sense. This is it: Is excess holding you back? Is having too much of a “good” thing keeping you from achieving your goals?

Excess can come in the form of …

  • Too much work
  • Too much play
  • Too much sugar
  • Too much sleep
  • Too much snacking
  • Too much alone time
  • Too much time with people
  • Too much social media time
  • Too much structure
  • Too much free-time
  • Too much … too much!

Are you living a lifestyle of ‘too much’ in certain areas? Is it time for you to practice discipline, diminishing excess, to free yourself and achieve your goals? Even a good thing, when turned to excess, can become destructive. It’s like the saying goes, “‘Everything is permissible’–but not everything is beneficial. ‘Everything is permissible’–but not everything is constructive.” I Cor. 10:23

If an activity, habit or lack thereof is keeping you from accomplishing your goals, maybe it’s time to reevaluate the time and attention you’re giving to that thing/activity/person.

Bacon-Wrapped Breakfast Cups: Tasty, Easy and Whole30 Approved!

Good Morning!

So, as you probably assumed from my last post, things are a little crazy for me right now. I’m transitioning from my current “office job” while balancing my first client, building my client base, launching my website and … yeah, it’s busy. BUT that doesn’t mean my healthy routine has to suffer. It is my commitment that it won’t. Priorities, people! 😉

Anyway, I’m super happy and I’m very excited to share a really easy recipe with you today. I tried this for the first time this week and it is DELICIOUS. And it has two of my favorite qualities in recipes:

  1. It’s under 8 ingredients
  2. It’s easy to make.

Oh and it’s also completely whole30 approved, paleo-friendly, gluten-free and dairy-free. LOVE. So, without further fanfare, here is the yumminess:

Ingredients:

OK I literally just looked at what veggies and veggie leftovers I had in my fridge and went from there. You can mix and match as you like. That’s part of what makes this so fun! You can use leftovers.

  • 6 Slices of All Natural Bacon
  • 10 eggs
  • 1/2 c Shredded Sweet Potato
  • 1/2 of a Red Bell Pepper, finely chopped
  • 3/4 c Baby Bella Mushrooms, finely chopped
  • 1/2 t Garlic and Herb Mrs. Dash
  • Salt and Pepper to taste

Directions:

Preheat oven to 350. Partially pre-cook the bacon if you want to ensure it’s crispier (that’s what I did.) While it cools, whisk all other ingredients together in a mixing bowl. Once bacon is cool, line 6 muffin pan cups (not the little cups because it won’t be enough room. Use medium to large.)

Next, pour the egg mixture into the bacon, acting as though it is now the cup, and bake on 350 for 20-25 minutes or until you can stick a fork into the cup and it comes out clean.

That’s it! I also made a version without the bacon, in a smaller muffin pan.

image-4They are great too but I prefer the bacon because, well, it’s bacon!

Hope you try these and enjoy them! It can be breakfast for the week and it doesn’t take long at all.

If you’ve been with me since I said I had something so wonderful to tell you but just couldn’t yet, I’m sorry to keep you in suspense for so long. The truth is that everything wasn’t final until yesterday so I didn’t want to count my chickens before …well,  you know. But now, the time has come for the biggest announcement I have ever made on this blog. And you get to be a part of it.

If you’ve been reading my blog for even a week, you know that I like to share encouraging posts on occasion. Posts that are meant to inspire you to DREAM BIG, take chances and live life to the fullest. These posts are straight from my heart and often, they are meant to encourage myself, too.

Well, this birdie just flew the coop.

This morning, I let my boss know that he should start looking for someone to replace me because I’m starting my own business. I’ll stay with them for a month or so to help them get someone to replace me but then I’m done and solely focused on my business. He was excited for me, prayed for me and it was all around a great meeting!

Today my life is forever changed. I’m taking the risk, I’m jumping from the nest …

I AM SO EXCITED!!!!!!

… and a little scared. But mostly excited 😉

I know this is my time.

I’ve been thinking about this for sometime and praying a lot, too. Doors have been opening left and right and it’s very clear to me that it is time to fly. And guess what? I am.
