The Perfect Cauliflower Puree (Step Aside, Mashed Potatoes.) + Slow Cooker BBQ Pork

So, I’m officially in love. To be more specific, I’m in love with an inanimate object. My food processor is lighting up my life with shredded, pureed, chopped and blended goodness and I want to shout it from the rooftops. If you have a food processor, you know exactly what I’m taking about. If you don’t, you are missing out and should buy one immediately after reading this post.

About month ago, Daniel and I went to a local restaurant downtown to get a steak. To my completely surprise and utter delight they had Cauliflower Puree on the menu! Can you believe? When have you ever seen that on a menu?? I’d never before that night. On top of it being on the menu it was actually the BEST I’d ever had. I asked the server to compliment the chef and ask what he used.

  • Cauliflower pureed in a food processor
  • Butter to taste (I used close to a stick! Oops.)
  • Salt and pepper and lots of butter … that’s it!

It’s literally as easy as it sounds. Just steam your cauliflower  in a big pot with about a cup of boiling water. Then add it to the food processor and blend with butter and salt and pepper to  taste. I just kept adding butter until it tasted just right (about 8T)

Note: Amount of butter shown is far less than I actually used. Just keep adding until you like the taste. I used closed to a stick!

This turned out so fluffy, creamy and DELICIOUS that I have no qualms with forever giving up mashed potatoes. You heard me. This recipe is a must try.
This recipe is from a slow cooker cookbook I have. You just put pork into a slow cooker and cover it with lots of BBQ and a 1/4 honey and add chopped onions. Super easy! Cook for 6-8 hours on low.
Early that morning, I took about 15 minutes to prep BBQ Pulled Pork. This recipe is from a slow cooker cookbook I have. You just put pork into a slow cooker and cover it with lots of BBQ (12 oz) and a 1/4 honey and add chopped onions. Super easy! Cook for 6-8 hours on low. The BBQ sauce wasn’t Paleo FYI. Healthy BBQ sauce is super hard to find by the way. I’m going to have to make some.

The final product! Dinner is served.
