So, I’m officially in love. To be more specific, I’m in love with an inanimate object. My food processor is lighting up my life with shredded, pureed, chopped and blended goodness and I want to shout it from the rooftops. If you have a food processor, you know exactly what I’m taking about. If you don’t, you are missing out and should buy one immediately after reading this post.
About month ago, Daniel and I went to a local restaurant downtown to get a steak. To my completely surprise and utter delight they had Cauliflower Puree on the menu! Can you believe? When have you ever seen that on a menu?? I’d never before that night. On top of it being on the menu it was actually the BEST I’d ever had. I asked the server to compliment the chef and ask what he used.
- Cauliflower pureed in a food processor
- Butter to taste (I used close to a stick! Oops.)
- Salt and pepper and lots of butter … that’s it!
It’s literally as easy as it sounds. Just steam your cauliflower in a big pot with about a cup of boiling water. Then add it to the food processor and blend with butter and salt and pepper to taste. I just kept adding butter until it tasted just right (about 8T)
The final product! Dinner is served.
The best part? You end up with leftovers for days!
