Tomato Basil Soup and Sunday Inspiration

Yay for Sunday! Around our house, Sunday is a day to rest and plan for the week ahead. We spend Saturday doing all the household items that build up throughout the week and I grocery shop and prep food as needed so that Sunday = as much relaxation as possible.

I heard an amazing quote in church today that I just had to share with you:

It’s not what it is, but how you see it.

Think about that. That statement ties perfectly into what I was sharing with you in my last post about being thankful. It’s all about perspective. You control how you respond by choosing to refocus your perspective in a positive, gratitude-filled way. Thankfulness is the key to adjusting your perspective. Think about that statement and let it sink in as you prepare for your week ahead. My Sunday gift to you.

Oh, and here’s some soup too (it’s from Make it Paleo)… Click the image for the recipe. The recipe says to try the soup even if you don’t usually like tomato soup. I was totally happy and surprised when Daniel actually tried this soup because he doesn’t like tomatoes. He loved it!

It’s definitely spicier than I expected though. Next time I will add coconut milk. We think this dish would pair perfectly with:

  • Mussels (as a sauce or soup accompaniment)
  • Roasted eggplant
  • Salmon
  • Grilled cheese (for those of you eating gluten and diary)
  • You could also add a dollop of sour cream or fresh croutons (again, not Paleo)
