How to Take a Road Trip and Keep it Paleo Pt. 1

Happy Monday!

Whew. This weekend was SUPER crazy for me. I had a bunch of family events that included all kinds of food that was NOT necessarily Paleo-friendly. I knew this going into the weekend though so I planned my attack while at the same time giving myself room to enjoy the weekend without stressing about food. Since this weekend involved travel AND special events, I wanted to share a two-part series about how I handled the weekend.

Roadtripin’ Paleo Style

I packed several snacks for the road trip and to keep in my purse in case I got hungry and there weren’t any Paleo-friendly options on hand … This included:

  • Trailmix with dried fruit
  • LaraBars
  • Carrots
  • A to-go mug full of coffee with coconut milk, cinnamon and organic vanilla extract
  • Refillable water bottle

Of course there are a lot of other things I could have brought. Some examples include:

  • Sugar Snap Peas
  • Fruit: think apples, bananas and citrus
  • Jerky
  • Mini sweet peppers
  • Mini Fruit Squeezes
  • Toasted coconut flakes
  • Almond butter (to your fruit)
