Let’s Do the Whole30 Together! + Sweet Potato Chips

21 Mar

Hey guys!

Sorry it’s been a few days since I last updated …. I have a very close family member who is in the hospital and it hasn’t left time for posting. This week’s posts may look a little different because I’ll be dealing with a really shaky internet connection here at the hospital.

Want to do the Whole30 together?

My eating hasn’t been very Paleo since being at the hospital (boo!!!) but I brought some healthy snacks to help with that …

I’ve also decided to start the Whole30 again. I’m doing this because I’ve felt myself slipping back into mindless snacking and craving sweet things too much. So, I want to ‘nip it in the bud’ so to speak. My plan is to start Monday, with food prep happening this weekend. I will share posts with you about what I’m eating so you can get inspiration and ideas for your own meals. Would you like to do the Whole30 with me? My Facebook page will have daily updates so you can let me know in the comments here or on my Facebook page if you’d like to participate. To read about what the Whole30 visit the website here: You can also view my video about it and read my first Whole30 success story here.

Recipe: Sweet Potato Chips

I made these over the weekend and they turned out really delicious! I used the slicing feature on my food processor and it was magical. My only recommendation would be to be careful to not use too much oil because it will make the chips less crispy.

The Easiest Taco Salad You’ll Ever Make: Paleo, Gluten-Free, Whole30 Taco Alternative

12 Mar

I love taco salad. I always have and I doubt that will ever change. It can be tough to eat Mexican now because I choose not to eat cheese, sour cream, beans, corn or tortilla chips but I recently found a surprisingly easy and delicious alternative to tacos. You’re going to love how easy this is. It’s not going to seem like a lot but the taste combination is AMAZING. The spices give this recipe that traditional spicy kick and the avocado provides the creaminess while the tomato adds acidity and sauciness. Feast your taste buds on this:

The  Easiest Taco Salad You’ll Ever Make

Total Time:  15 minutes

Servings: 4

Ingredients

1 lb ground Beef

2 T all natural taco mix or make your own

1 head iceberg lettuce (torn into bite-size pieces or shredded)

1 large tomato (chopped)

1 avocado (sliced or chopped)

salt to taste

Optional: Black olives

photo

This is the taco mix I use and I found it at a local natural food store.

Directions:

  1. Brown the ground beef in a medium frying pan.
  2. When cooked through, drain the fat and then add 1/2 c water and 2 T taco mix.
  3. Bring to a boil and simmer 10 minutes or until liquid reduces.
  4. While the beef is simmering, you can chop and prep your veggies then add your lettuce into 4 medium size bowls.
  5. Add the beef to the lettuce and layer the tomato, avocado and black olives (optional).
  6. That’s it! Enjoy this super filling, healthy and tasty taco alternative.

Idea: You may want to add a crunch to this … I’d love to hear any ideas on a Paleo-friendly crunchy option. I didn’t find myself missing a crunchy aspect because it’s so gosh darn good but if you think of one, share your suggestion in the comments below.
