UGH! Running, Chicken Basil Meatloaf and My NEW Favorite Cookbook

Happy Thursday!

I’ve been kinda quiet about my half-marathon training other than sharing running updates on my Facebook page so I wanted to take a minute to update you on how it’s been going. Well … it kinda sucks. Just being honest but it’s taking a lot longer to get the ‘hang’ of running. I’ve told you how I really feel about running and my desire to be a gazelle but this is much harder than I thought it would be.

My Running Schedule

I’ve been running x3/week and I’ve been doing two 3-mile runs and one longer run on Saturdays (I’m up to 6 miles!!). I feel really proud of myself for getting to the point where I can run 3 miles without stopping and then up to 6 miles with occasional stops. Overall I’m running 95% of the time and that makes me proud.

The Truth

It’s just that running sucks. Right now, running really sucks. What I mean by that is that it’s really hard. It’s such a mental battle to keep going without stopping. I’ve been told that I should be OK for the half because I can do 6 miles. However, I’m trying to work my way up to 9 miles before the race. I’ve started running with no real background to speak of so I’m not sure if the whole, “This sucks!!” thing is normal. I’ve been running 2-3 a week for over a month and the past couple weeks I’ve been running x3/week.

Um …

SO not trying to be a downer here just wanted to be honest. The really cool part of this process is that running is mostly mental. I mean, it’s hard work but for me it’s mostly just telling yourself you are going to keep going even when your mind wants to stop. I’m still being told by seasoned runners that you eventually like this craziness but that remains to be seen. Until then, I’m going to keep running in prep for rocking my first half marathon.

Now let’s talk food for a minute. I just got a new cookbook and I LOVE it. It’s PaleOMG’s first cookbook, “OMG. That’s Paleo?” and it’s awesome. I didn’t doubt that it would be awesome because all of her recipes are but I really like the layout of the cookbook itself. She provides space for variations and notes on each page and she rambles in her typical endearing fashion throughout the cookbook. I love it! Here’s a recipe from the cookbook that I tried yesterday and it was totally YUM.

Note: Mine finished product looks a bit different because I incorporated pesto instead of just basil. It was really good and SUPER easy. Let me know if you try it.

Have You Celebrated Yourself Lately?

KateUpdates Just DID it.

The weather was crazy over here in Ohio-land this weekend. It was in the upper 50’s on Saturday and yesterday, it was 68 degrees!! I am now officially cleaning out my closet and preparing for spring. That’s it. I cannot wait any longer! The weather wasn’t the only crazy thing that happened this weekend … I actually went running (!) AND I ran over 5 miles (!!!) blasting my previous distance (4 miles) out of the water. I’m so proud of myself.

As I was running in the gorgeous windy, sunshiney weather I was reminded about the need to celebrate. I don’t think we celebrate ourselves enough. I know I don’t. I’m talking about celebrating when you accomplish goals whether they’re little or big. Taking a breath and embracing the moment. Appreciating your hard work and acknowledging how far you’ve come.

Let’s take a moment right now and celebrate our accomplishments. There are definitely some amazing milestones worth celebrating.

  • Did you resist food temptation? Celebrate!
  • Did you workout when you didn’t feel like it? Celebrate!
  • Did you just beat a personal fitness record? Celebrate!
  • Have you made progress toward your 2013 goals? Celebrate!
  • Have you cut out negative influences resulting in a healthier you? Celebrate!

There are so many reasons to celebrate and we pass them by all too often. Today, my challenge to you is to give yourself a pat on the back. Do a crazy little dance. Jump up and down. Sing or shout and celebrate yourself. You deserve it.

Happy Musical Monday!

I’m so ready for this week. This week is going to be amazing. Yes, I can already tell! Last week was hard because I had a sinus infection and Daniel has been really sick with the flu. Being sick is no fun but watching someone you love go through sickness is even worse. Over the weekend I was reminded of how important it is to pray for people. There are so many people going through really tough stuff and sometimes, all you can do is pray for them. So, I commit to doing more of that.

I’ve also been thinking about conquering my fear of running a half marathon (it’s coming up in May!!!) and this week begins a focused effort to getting closer to my fitness goal. I’ve set some lofty goals in the past but this one in particular scares me. Somehow, I need to get to 13.1 miles in the next 2 months. Oy vey.

In preparation, I will be working out 6 days a week. I’m running 4 times a week and strength training the other two days. This goal is intimidating to say the least. As I’ve said before, I don’t have a history of running long distances but I do dream of being a gazelle. This is the first step.

I keep thinking of the future and visualizing what I will feel like when I finish the race. I can’t wait to see what my body looks like and what it feels like to have the stamina to finish 13.1. This is one of my 2013 goals that will soon be accomplished. Until then, I’m trying not to be scared and instead focus on making progress every day.
