Let’s Do the Whole30 Together! + Sweet Potato Chips

Hey guys!

Sorry it’s been a few days since I last updated …. I have a very close family member who is in the hospital and it hasn’t left time for posting. This week’s posts may look a little different because I’ll be dealing with a really shaky internet connection here at the hospital.

Want to do the Whole30 together?

My eating hasn’t been very Paleo since being at the hospital (boo!!!) but I brought some healthy snacks to help with that …

I’ve also decided to start the Whole30 again. I’m doing this because I’ve felt myself slipping back into mindless snacking and craving sweet things too much. So, I want to ‘nip it in the bud’ so to speak. My plan is to start Monday, with food prep happening this weekend. I will share posts with you about what I’m eating so you can get inspiration and ideas for your own meals. Would you like to do the Whole30 with me? Recipe: Sweet Potato Chips

I made these over the weekend and they turned out really delicious! I used the slicing feature on my food processor and it was magical. My only recommendation would be to be careful to not use too much oil because it will make the chips less crispy.

Have You Celebrated Yourself Lately?

KateUpdates Just DID it.

The weather was crazy over here in Ohio-land this weekend. It was in the upper 50’s on Saturday and yesterday, it was 68 degrees!! I am now officially cleaning out my closet and preparing for spring. That’s it. I cannot wait any longer! The weather wasn’t the only crazy thing that happened this weekend … I actually went running (!) AND I ran over 5 miles (!!!) blasting my previous distance (4 miles) out of the water. I’m so proud of myself.

As I was running in the gorgeous windy, sunshiney weather I was reminded about the need to celebrate. I don’t think we celebrate ourselves enough. I know I don’t. I’m talking about celebrating when you accomplish goals whether they’re little or big. Taking a breath and embracing the moment. Appreciating your hard work and acknowledging how far you’ve come.

Let’s take a moment right now and celebrate our accomplishments. There are definitely some amazing milestones worth celebrating.

  • Did you resist food temptation? Celebrate!
  • Did you workout when you didn’t feel like it? Celebrate!
  • Did you just beat a personal fitness record? Celebrate!
  • Have you made progress toward your 2013 goals? Celebrate!
  • Have you cut out negative influences resulting in a healthier you? Celebrate!

There are so many reasons to celebrate and we pass them by all too often. Today, my challenge to you is to give yourself a pat on the back. Do a crazy little dance. Jump up and down. Sing or shout and celebrate yourself. You deserve it.

You Have a Choice: Change the Way You Think!

This morning I realized I needed to change my thinking (Man, my coffee must have been good this morning!) I realized that I had been getting caught up in the “I can’t” mentality and it stops today. I’m sure you know what I mean. It takes different forms but here are some examples:

  • I can’t eat that …
  • I can’t eat there …
  • I can’t run that far …
  • I can’t fit it into my schedule.

Instead of viewing my choices as CHOICES I have been viewing them as restrictions. That’s just not true. I’m choosing to do healthy things for my mind, body and spirit. No one is forcing me. This is a choice! So, I am going to be very sensitive to what I’m thinking about food starting NOW. Instead of saying, “I can’t,” I will stop that thought mid-sentence and change it to: “I choose not to.” See the difference?

  • I choose not to eat that because it would hurt body.
  • I choose not to eat there because there aren’t healthy options and there’s food temptation.
  • I choose to run that far to build my endurance, challenge myself and strengthen the only body I will ever have.
  • I choose to make time for fitness and eating healthy. It’s an investment with an endless ROI.

It’s time to straighten up our priorities people. We’re lazy. We’re a pleasure-seeking society that ranks immediate gratification over substance. Let’s challenge ourselves and invest time into lasting health and results. Let’s challenge our thinking and help each other.

P.S. Here’s the running schedule I’ve been using … I’m on week 2! I’ve never done a run more than 5 miles so Saturday will be EPIC!
