Paleo Slow Cooker Sweet Aromatic Chicken (Gluten-Free and Dairy-Free)

29 Jan

Yum.

I’ve told you before that I love my slow cooker. If you don’t have one, it is completely worth the investment and I highly encourage you to get one. It will save you time AND money. I wanted to share a slow cooker meal that I’ve been making just about every other week lately because it’s SO GOOD. It’s super easy to make and it’s completely Paleo.

I serve this with fresh green beans or a sweet potato. It’s super yummy. Here’s the recipe … let me know what you think!

Prep Time: 5-10 minutes

Cooking Time: 5-6 hours (8 for frozen chicken)

Note: If you use frozen chicken, cut the liquid ingredients in half.

Ingredients

  • 1/2 cup coconut milk
  • 1/2 cup water
  • 4 Chicken breasts or 8 skinless chicken thighs
  • 1/2 cup maple syrup
  • 2 Tbsp coconut aminios (or soy sauce if you’re not eating Paleo)
  • 1/8 tsp. ground cloves
  • 2 garlic cloves, minced

Directions

Combine coconut milk and water. Pour into slow cooker. Add remaining ingredients in order listed. Cover and cook on low 5-6 hours or 8 hours if using frozen chicken.

That’s it. Super easy and delicious.

Mmmmm - this is the recipe that I use, where did you find this version? Before Paleo, I used brown sugar and soy sauce. Good reminder to make this, thanks!

I adapted this from the slow cooker book you gave me! :)

;) Good job! I wonder if I can make the sauce freestanding - we have three rotisserie chickens. I can make cauliflower rice...
